You already knew I was obsessed with photography, but I’m also obsessed with food. I love photographing my lunch before I devour it :) I’ve been a vegetarian for over 7 years and am always challenging myself in what to cook, especially since I live with an omnivore. Panzanella is often called a bread salad but in this one there’s also loads of fresh mesclun, tomatoes, asparagus, roasted peppers, zucchini all mixed with a thick homemade parmesan dressing. I added some “chicken” for protein, I recommend Quorn’s naked cutlets. This recipe is from Moosewood Restaurant New Classics Cookbook, which is my kitchen bible.

This weekend was serious. Serious about sitting on our plump red couch and watching movies. I rarely do this, but when I need it, I go all in. This weekend I saw The Reader, Seven Pounds, and Twilight. And throughly enjoyed and recommend all of them. I think I covered different genres fairly well. And a movie just wouldn’t be the same with out a big ol’ bowl of kettle corn. Truth be told, I’ve never liked popcorn but I got hooked on this stuff at a folk festival in upstate New York one year and haven’t stopped since. A tad bit salty. A tad bit sweet. Perfection.
In more photo related news I hope the mail man is good to me today and brings me my shiny new business cards! Woot!

Today is Frederick and my anniversary! I feel so blessed to have had him in my life the past five years, even though long distance wasn’t the easiest, it was well worth the wait! I moved to Texas four months ago and being able to have him in my life every single day is truly amazing. I feel we’ve grown so much closer and so quickly. Fred is my cornerstone, my love, my best friend, he comforts me, and makes me laugh. All the time :) I just love him! Okay Fred, time to get home so I can open my gift! That big shiny bow has been staring at me all day!
